After having such success with my Simple Salmon recipe I figured I could try my hand at Tilapia.  My experience with baking Tilapia until present has always been prepackaged frozen fillets that now I realize were not worth paying for the convenience.  The prepackaged fillets are so small and completely lack in flavor compared to this Baked Italian Panko Tilapia recipe.   Here’s what you need…

  • 2 Tilapia Fillets
  • 1/4 cup mayo
  • 1 tbsp lemon pepper
  • 1 cup Italian Panko
  • dash garlic salt
  • spray butter

Preheat oven 375. Line a baking sheet with foil or parchment paper then use spray butter.

I bought my fillets at Costco so they came in a package of 4 whole Tilapia steaks that I split down the middle.  One side is thicker than the other but that worked out perfect for my hubby and I.  After separating my fillets I set up my dipping station.

I mixed my mayo and lemon pepper together in a bowl and poured my panko onto a paper plate.

When I dipped my fillets in the mayo I tried to get them covered on all sides so the panko would have something to stick to but I didn’t want a thick coating of mayo.  Next, lay the tilapia in the panko and press on all sides to get an even distribution.  Then place them on the prepared baking pan.  Sprinkle with a dash of garlic salt and spray tops with spray butter.

Place pan in the oven and bake at 375 for 15-20min…broil for a few minutes at the end to get a nice brown color;)

This was delish!!!  Way better than pre-made and the fillets were twice the size for the same price!!!

For the other six fillets I dipped them in the mayo/lemon pepper mixture and freezer bagged them with instructions marked on the outside for easy preparation next time.
